Birch & Elderflower Wild Scottish Spirit (50 cl)
Location: Alyth, Blairgowrie
The Birch & Elderflower Wild Scottish Spirit comes from the environmentally responsible Highland Boundary who capture the unique flavours of Scottish botanicals, distilling them into natural spirits inspired by the wild.
The botanicals used are hand foraged from Scottish woodlands either on or nearby the farm belonging to Marian & Simon, the founders of Highland Boundary. The botanicals are then combined with grain spirit and mineral-rich spring water from Alyth Hill which has been naturally filtered through the 450 million year-old Devonian sandstone bedrock of Strathmore.
Highland Boundary spirits are wildly different, will appeal to gin and vodka drinkers and are great additions to your drinks cabinet.
The Birch & Elderflower Scottish Spirit has a nose like fresh forest air on a cool, spring morning. On the palate, the taste starts crisp and fresh with hints of vanilla, growing with an intensity as it fires up the taste buds in to a deep, fascinating mix of bitter and sweet that is rounded, smooth, creamy and warm and finishes with floral tones.
The perfect serve
Exceptionally versatile, there are many ways to enjoy this Scottish Spirit. Serve straight from the freezer for a sipping drink, serve over ice with soda and garnish with apple & mint for a refreshing long drink or use as the base for a number of cocktails such as a mojito.
Meet the maker
Highland Boundary was launched in 2018 by husband and wife team Marian Bruce & Simon Montador who live and work near the market town of Alyth in Perthshire. Their farm sits on the Highland Boundary Fault which divides the north and south of Scotland. Their vision is to craft a new generation of Scottish spirits by combining botanicals from the Highlands with grain spirit from the south.
