It has been a while but we've been baking again!
We have not been able to get over how tasty our last bake was (the Ginger & Rum Cake) and we've found ourself making this fairly regularly over the past few weeks!
However, we decided it was time to move on a try a fresh bake. We didn't stray too far though and opted for a Spiced Rum & Cinnamon Swirl Loaf using the 45 Spiced Rum from The Jacobites Spirits Co.

Like most people, during lockdown we’re finding as many ways as we can to use pantry ingredients in fun and tasty ways. Having (mostly) mastered scones, banana bread & cinnamon rolls, it was time for a new challenge!
Having a rummage in the baking cupboard, all set for pushing outside my comfort zone, I decided it was time to make a loaf - a spiced loaf with ginger and some Wester Rum. Starting mixing away before checking if I had a loaf tin (I did not), so it became a loaf-cake.

Like most, during the lockdown; we’re finding ways to get creative with our baking. We levelled up some plain scones with the addition of gin and lemon – making an afternoon tea staple even more exciting!
Family recipes can be easily altered to include your favourite ingredients – for some this might be the addition of dried fruit, fresh fruit, nuts or chocolate but in true Craft56 fashion, we added gin. Biggar Gin uses citrus peel as a botanical so this was the gin of choice!

We used the bold McLean’s Citrus Gin to give our pancakes a refreshing kick and incorporated the gin into a refreshing sugar syrup you can recreate yourself at home!

With the hints of an Indian Summer we've been experiencing in Glasgow this week the next in our Boozy Baking series saw us attempt some refreshing Gin, Tonic & Orange cupcakes.
We used a combination of Ellis No.3 Butterfly Pea Gin and Cushiedoos quinine-free Scottish Tonic Water to make our cupcakes. We love the deep, earthy floral tones in the gin which complements orange well. As Cushiedoos tonic is quinine-free it's not as bitter as other botanicals so knew it would also work well in the recipe.

It’s been a long time but the return of the Great British Bake Off this week has inspired us to get back into the kitchen and get some boozy baking done!
It’s hardly a showstopper but we thought we’d ease ourselves back into it with some Spiced Rum & Raisin Cookies.
We decided to go with Wester Spiced Rum as we love the full-bodied flavour of the spices, citrus zests and vanilla in it.

Our boozy bake this month is the perfect recipe to make you feel warm inside on a cold, dark winter night. What's more, our choice of gin was inspired by Halloween too!
We've baked a Spiced Plum and Rhubarb Gin cake using Solway Spirits' Rhubarb Crumble Gin. We love the Rhubarb Crumble Gin (we normally drink with ginger ale) as it's as refreshing as it is warming and perfect for a cosy night in front of the fire. In addition, with it also being Halloween, we couldn't see past using a Solway Spirits gin given the eerie, gothic label design on the bottle.
